We are certainly enjoying our week at the Hard Rock Hotel. This is our third time here, the first was eight years ago with Ruth and Ken, the second was last year with Ruth and my brother Ken and his wife Anne.
When we checked in Saturday we were greeted like returning family and have been made to feel very much at home and welcomed since then.
We have settled into a routine here with breakfast at Caio near the beach, then off to the palapa to read, water aerobics at noon, followed by lunch either on the beach or at one of several restaurants on site. Then shower and change for dinner at either Caio (Italian), Zen (Asian) or Frida (Mexican). There are other choices but those are the 3 we prefer
Tonight we had a beach side seat at Frida’s, and we had a spectacular sunset which lasted through most of dinner. There was just enough cloud to hold the light, and the sky kept changing colour for more than 45 minutes.
We started dinner with guacamole made at our table, with 3 avocados! It was absolutely delicious with just the right amount of lime juice and cilantro. Frida salad followed, with figs and goat cheese and was wonderful. The main course was salmon al pastore, cooked to perfection. Typically we don’t do dessert, but we did tonight!
